Eating Fit’s Pad Thai Baked Fish

8 Ingredients:

  • 200g fillet of Rockling fish
  • (other fish can be used)
  • 1 - 2 tsp Pad Thai Paste (Valcom Authentic Pad Thai Paste)
  • 1 Red chilli, chopped finely (optional)
  • 3-5 Cashews or peanuts, chopped
  • 3-5 Cashews or peanuts, chopped
  • 1/2 tbs Spring onion (optional), chopped
  • 1 slice Lemon (optional)

Method:

Pre heat oven to 180°C
Chop chilli, spring onion and nuts
Tear a piece of foil 30cm X 30cm and place fish fillet in centre
Top Rockling fillet with Pad Thai Paste, chilli, nuts, spring onion and slice of lemon
Wrap fish up in foil like a parcel then bake in oven for 20-25 minutes (pre heated)
Cut chosen vegetables and sweet potato to similar size and steam in steamer
Serve fish with side of vegetables and sweet potato
