Paella Marinara
Perfect for a satisfying and easy-to-make meal.
Ingredients:
2 tbsp olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, chopped
1 cup cherry tomatoes, halved
1 1/2 cups Arborio rice
1 tsp smoked paprika
1/2 tsp saffron threads (optional)
1/2 cup dry white wine
4 cups fish or chicken stock
300g mixed seafood (mussels, clams, shrimp, squid)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Methods:
Heat olive oil in a large skillet or paella pan. Sauté onion until translucent.
Add garlic and bell pepper; cook until softened.
Stir in rice, paprika, and saffron (if using); cook for 2-3 minutes.
Pour in the wine, stirring until absorbed. Gradually add stock, cooking until rice is tender.
Fold in seafood and peas; cover and cook until seafood is done.
Season with salt and pepper, garnish with parsley and serve with lemon wedges.
