Salmon Avo Cups
A refreshing and healthy dish featuring creamy avocado and succulent salmon nestled in crisp lettuce cups. Perfect for a light meal or elegant appetiser, these cups offer a delightful blend of flavors and textures.
Ingredients:
1 ripe avocado
100g sashimi-grade salmon, diced
1/2 cup sushi rice, cooked and seasoned
1 tbsp soy sauce
1 tbsp Kewpie mayo
1/2 tsp sriracha
1/2 tbsp sesame seeds
1 spring onion, finely sliced
Methods:
Halve the avocados, remove the seed, and scoop out some flesh to form cups.
Mix soy sauce, Kewpie mayo, and sriracha and combine with the diced salmon. Fill avocado cups with sushi rice, top with dressed salmon.
Drizzle sauce, sprinkle sesame seeds, and add sliced spring onion.
