Salmon Avo Cups 

A refreshing and healthy dish featuring creamy avocado and succulent salmon nestled in crisp lettuce cups. Perfect for a light meal or elegant appetiser, these cups offer a delightful blend of flavors and textures.

Ingredients:

  • 1 ripe avocado

  • 100g sashimi-grade salmon, diced

  • 1/2 cup sushi rice, cooked and seasoned

  • 1 tbsp soy sauce

  • 1 tbsp Kewpie mayo

  • 1/2 tsp sriracha

  • 1/2 tbsp sesame seeds

  • 1 spring onion, finely sliced


Methods:

  • Halve the avocados, remove the seed, and scoop out some flesh to form cups.

  • Mix soy sauce, Kewpie mayo, and sriracha and combine with the diced salmon. Fill avocado cups with sushi rice, top with dressed salmon.

  • Drizzle sauce, sprinkle sesame seeds, and add sliced spring onion.
