Prawn Cocktail Cups
Ingredients
500g fresh, cooked prawns
Cos lettuce leaves
1 avocado
1 mango
1 lemon
Lemon Lime and Dill Mayonaisse
1 thinly sliced cucumber
1 cup fresh parsley
Salt to taste
Method
Dice the avocado, mango, and 250g of the prawn tails. Sprinkle with chopped parsley and salt. Add a squeeze of lemon juice and generously dollop on some mayonnaise.
Mix in a bowl until well combined. Carefully spoon the mixture into the crisp cos lettuce leaves
Once the lettuce leaves are full, add a whole prawn, a squeeze of lemon and some cucumber to finish
