“Marry Me” Salmon
Ingredients
4 salmon fillets (skinless)
2 teaspoon garlic (minced)
1/2 cup sun-dried tomatoes (drained)
1 teaspoon lemon zest
1 1/2 cups chicken broth
1 handful of baby spinach
2 teaspoons dried Italian seasoning
2 tablespoons olive oil
2 tablespoons flour
3 tablespoons butter
3/4 cup heavy cream
1/2 cup parmesan (grated)
1/2 teaspoon salt
1/4 teaspoon cracked black pepper
Method
Pat dry & season the salmon with Italian seasoning, salt and pepper. Cook in the oven for 10-15min.
Add butter and garlic to a hot pan and simmer for 2 min. Add the flour, chicken broth and white wine (optional) and simmer for 5min.
Reduce heat, pour in cream, stir in parmesan and sun-dried tomatoes. Season with remaining seasoning, salt, & pepper.
Return salmon to the sauce, and baby spinach and simmer for 2-3 min.
Serve with rice or mashed potato.
