Smoked Trout Soba Salad
Ingredients
Smoked Trout Fillet
Soba Noodles
Edamame
Sugar Snap Peas
Cucumber
Chives
Sesame seeds
Kewpie mayo
Ponzu sauce
Method
Cook the soba noodles according to package instructions. Drain, rinse under cold water, and set aside.
Blanch the edamame and sugar snap peas in boiling water for 1-2 minutes until bright green. Drain and rinse under cold water. Slice the cucumber and finely chop the chives.
In a large mixing bowl, combine cooked soba noodles, blanched edamame, sugar snap peas, cucumber, chives, and sesame seeds. Gently toss to mix.
Break the smoked trout fillet into bite-sized pieces and add to the salad mixture. Gently toss again to distribute the trout. Drizzle Kewpie mayo and Ponzu sauce over the salad according to taste. Toss gently to coat.
Transfer the salad to serving plates or bowls. Optionally, sprinkle sesame seeds or chives on top for garnish.
