Zesty Prawn Rolls
Ingredients
300g prawn meat
1 knob of butter
1 cucumber
3 radishes
1 clove garlic grated
1/2 knob of ginger grated
Chopped parsley
Zest of lime
Miso Mayonaise
Bread Rolls or brioche buns
Method
Start by marinating the prawns with the zest of 1 lime, 1 teaspoon of grated ginger, and 2 cloves of minced garlic. Let them sit for 15-20 minutes.
Slice the bread rolls in half and spread butter on the cut sides. Sprinkle chopped parsley over the buttered rolls. Toast them lightly under a grill until golden brown. Set aside.
Heat a skillet over medium-high heat and add a bit of oil. Fry the marinated prawns for about 2 minutes on each side until they develop a nice colour and are fully cooked. Remove from heat.
Assemble your rolls by generously spreading mayonnaise on each toasted roll. Layer with fresh lettuce leaves, slices of cucumber, and thinly sliced radish.
Top with the cooked prawns, distributing them evenly among the rolls.
